Coconut milk should not be confused with coconut water, which is found naturally in immature green coconuts.

Unlike coconut water, the milk does not occur naturally. Instead, solid coconut flesh is mixed with water to make coconut milk, which is about 50% water.

By contrast, coconut water is about 94% water. It contains much less fat and far fewer nutrients than coconut milk.  

 

 

Making our organic coconut milk powder is a small local operation.  Our friends who harvest organic coconuts for water on Maui use the mature coconuts to make our coconut milk powder.  

Our coconut milk powder ingredients:   Evaporated coconut milk powder from mature, ripe, organic coconuts and 2% of organic tapioca flour.

To make coconut milk, add 1 heaping scoop coconut milk powder to water until it reaches desired consistency.  To make “light coconut milk,” mix ½ cup of coconut milk powder with 1 cup warm water.  To make “coconut cream,” mix 1.5 cups coconut milk powder with 1 cup of warm water.

Health Benefits of Coconut Milk

One of the main reasons why coconut milk is so great for us because it's a nutrient-dense source of fat.  By now, we've all learned that we have nothing to fear from fat.  

  • Coconut milk contains a specific medium-chain fat called lauric acid, a compound that is also found in human breast milk.
  • These fatty acids are quickly converted into energy instead of storing as fat in the body.
  • Lauric acid has anti-bacterial properties and can improve cholesterol levels.

Pina Colada Smoothie

    That’s it! Just 4 simple and wholesome ingredients! You don’t need to add any extra sugar because the fruit is sweet enough.  Add a few dates for extra sweetness.

    Coconut and Almond Cookies

    Ingredients

    • 1 oz almond meal
    • 1 oz coconut oil
    • ½ cup of coconut sugar
    • 1 cup of rolled oats
    • 1/4 cup of hemp seeds
    • 1 teaspoon of coconut milk powder
    • 1 ounce of dark chocolate chunks
    • 1/3 cup of almond butter
    • Pinch of salt
    • Pinch of ground cardamom
    • 1 oz of coconut oil

    Instructions

    Mix all the ingredients in a large bowl till it forms the consistency of cookie dough.  Line a baking tray with butter paper. Then make small mounds out of the cookie dough and place them one by one on the baking dish. Bake these in the oven for 25 minutes.

    Thai Coconut Soup

    Step 1. Saute carrot and celery in coconut oil over med-high heat in a 3.5-quart soup pot until tender and fragrant.
    Step 2. Add aromatics, vegetable broth, coconut milk, vegan Green Thai curry paste or curry powder From Hawaii with Love (substitute 1 teaspoon of Thai curry powder for every 1 tablespoon of curry paste), add remaining vegetables to the pot.  Veggie Options:carrots
    • celery
    • broccoli
    • taro
    • ulu (breadfruit)
    • sweet potato
    • boc choy
    • ginger
    • green beans
    • green cabbage
    • cauliflower
    • swiss chard, kale, arugula, spinach or other dark leafy greens
      Step 3. Increase heat to bring everything just to a boil.
      Step 4. Reduce heat to low, cover, and simmer.
      Step 5. Serve warm. Garnish with cilantro or Thai basil and lime wedges.     
      Other options:  Add 1/2 cup cooked rice noodles or steamed jasmine rice or raw cauliflower rice to your bowl of curry soup. Serve with chopsticks or a fork and spoon.

      Coconut Chocolate Avocado Dessert

      2 large avocados, peeled, pitted and cubed
      3 tablespoons cocoa powder
      5 tablespoons coconut sugar (or dates or maple syrup)
      1/3 cup coconut milk 
      2 teaspoons vanilla extract
      1 pinch ground cinnamon
      Blend avocados, cocoa powder, coconut sugar, coconut milk, vanilla extract and cinnamon in a blender until smooth. Transfer into a bowl or 4 fancy bowls or glasses and refrigerate until chilled, about 30 minutes.  Sprinkle with shredded coconut flakes, bee pollen From Hawaii with Love and fresh berries.
